Our Banarasi Aam Ka Achar is made from raw green mangoes hand-picked from UP orchards at the peak of summer, every single year. Each batch is prepared by Banarasi women artisans using kacchi ghani cold-pressed mustard oil – the same way it has been made in Kashi homes for generations. No factory, no rush, no shortcuts.

No preservatives. No artificial colour. No white salt. No vinegar. Just whole spices – kalonji, methi dana, haldi, saunf, hing – coarsely ground fresh and mixed with the seasonal kairi crop. Banarasi mango pickle is a traditional North Indian style achar where raw green mangoes (kairi) are mixed with whole spices and cold-pressed mustard oil, then allowed to mature slowly in sunlight. Unlike cooked or commercially bottled pickles, this style develops its flavour gradually over weeks. The longer it matures, the deeper the taste becomes. It is the kind of pickle that gets better sitting in your pantry – not worse.
