At Salteen, we celebrate India’s age-old art of slow pickling - where time, sun, and spice come together in harmony.

Selection: Fresh, firm, thin-skinned lemons are sourced from local farms around Varanasi to ensure natural tang and perfect zest.

Preparation: Lemons are washed, dried, and sliced carefully to maintain consistency and flavor in every piece.

Spice Mix: Our in-house Banarasi blend includes pink salt, Kashmiri red chilli, and select whole spices, gently roasted and ground for that unmistakable aroma.

Sun Curing: Each batch is sun-cured in traditional glass jars for several days, allowing the flavours to deepen and the lemon skin to soften - creating that signature Banarasi balance of tang and warmth.
