What is Banarasi Nimbu Ka Achar?

Lemon pickle in the Banarasi tradition uses thin-skinned lemons (not the thick-rind variety) packed in rock salt and whole spices, then slowly cured in cold-pressed mustard oil under sunlight. The slow curing concentrates the citrus oils and softens the rind without cooking it. No heat, no vinegar, no artificial tartness – just natural lemon at its most intense.

Why thin-skinned UP nimbu?

Most commercial lemon pickles use thick-skinned lemons because they are easier to handle in bulk. We specifically source thin-skinned lemons from UP because they have higher citric acid content, more essential oils in the rind and a more complex sour flavour. The rind softens faster and more completely during curing, giving you a more balanced bite throughout.
