“Thekua – Chhath Puja ka prasad. Ghar ka swad, mitti ki khushboo.”
Our Homestyle Thekua is made from whole wheat flour kneaded with natural jaggery syrup, saunf and elaichi, then shaped in traditional carved wooden moulds and slow-fried to a firm, golden, fragrant sweet. No refined sugar, no maida, no artificial flavour.
Thekua is the sacred prasad of Chhath Puja across Bihar, Jharkhand and eastern UP – one of the most significant festivals in the eastern Ganga plain. For millions of people, the smell of thekua frying means home, festival and belonging. This recipe follows the traditional preparation method exactly.
What is Thekua?
A traditional sweet from Bihar, Jharkhand and eastern UP made specifically during Chhath Puja as prasad for Surya Puja. Made from atta, jaggery, saunf and elaichi – no maida, no refined sugar. Shaped in traditional carved wooden moulds with distinctive patterns. Firm outside, slightly softer inside. Has a deep earthy sweetness from the jaggery.
Does it contain refined sugar or maida?
Neither. Traditional thekua recipe uses only whole wheat atta and jaggery. Maida and refined sugar are modern commercial substitutions that change the texture and nutritional profile significantly. Our thekua stays true to the original recipe.

UP
The base. Whole wheat only - no maida. Gives thekua its dense, satisfying texture.
Gur (Jaggery)
UP sugarcane farms
Dissolved in water and kneaded into the dough. Deep caramel sweetness.
Saunf (Fennel Seeds)
Varanasi, UP
Essential flavouring in thekua. The fennel aroma is characteristic of this sweet.
Elaichi (Cardamom)
India
Warm floral note that elevates the jaggery sweetness.
Oil or Ghee
India
Frying medium. Gives the characteristic golden crispness on the outside.
With Warm Milk
The traditional morning combination. Especially good in winter.

Sweet ladoo with unsweetened chai - a perfect contrast.

Pro tip
Warm thekua slightly in a dry pan or microwave for 15 seconds and eat with a small piece of gur on the side. The warmth revives the saunf aroma and makes the texture perfect again even if it has been sitting for a few days.
Storage tip
Store at room temperature in a cool dry place. Consume within 2 weeks of opening at room temperature. Refrigerate for up to 6 weeks. Keep away from moisture.
Homestyle Thekua is the product that most clearly shows our commitment to authentic regional food. It is almost never found made properly online because the authentic preparation - whole wheat atta, natural jaggery, wooden mould shaping, slow frying - takes real skill and time. Commercial thekua uses maida and refined sugar. Ours uses the original recipe that has been made in eastern UP and Bihar homes for Chhath Puja for generations. The taste difference from maida-sugar versions is immediately obvious.
