Our Karela Ka Achar is made from small, tender bitter gourds salted to draw out excess bitterness, then coated in whole spice masala and slow-cured in kacchi ghani mustard oil for 3 weeks. The result is a deeply complex, bitter-spiced pickle where the bitterness has mellowed into something sophisticated and very addictive.
Karela achar is one of the rarest achars in the Indian pantry. Very few commercial brands make it because the preparation is effort-intensive and the market for bitter food is smaller. But for those who appreciate complex flavours, this is unlike anything else.

Is karela pickle bitter?
Less bitter than raw karela. The salting and squeezing process before marination removes a significant amount of the bitter liquid. The curing in mustard oil further mellows the bitterness over the weeks. What remains is a controlled, pleasant bitterness that becomes part of the complex flavour profile – not an unpleasant hit, but a character note.
Is it good for health?
Bitter gourd has a long history in traditional Ayurvedic medicine for blood sugar management and digestive support. The pickling process in cold-pressed mustard oil preserves much of the active compounds – particularly momordicin which is responsible for the bitter taste and many of the reported health properties. Many diabetic patients eat small amounts of karela achar as part of their daily routine.
