The Salteen Story
सिरका — Salteen में कभी-कभी, सही जगह। Vinegar used purposefully and transparently — where the recipe genuinely requires its sharp acidity.
At Salteen, vinegar is not a default ingredient. Our preference is always for natural acidulants — the tartaric acid of raw mango, the citric acid of lemon, the acetic acid of naturally fermented preparations. However, in certain pickle preparations where a specific sharp, clean acidity is required and shelf-life is a consideration, white vinegar has a legitimate role.
We use food-grade white vinegar in select preparations — particularly in certain Western-style pickled preparations and as a secondary preservative in products that will be shipped in hot weather. The amount used is always minimal — enough to achieve the required pH without the vinegar flavour dominating.
Transparency about when and why we use vinegar is important to us. We do not hide its use, and we do not pretend that every preparation is vinegar-free when it is not.
We use vinegar when it is the right tool for the job. We would rather be honest about it than pretend we never use it.
