कैरी - अचार की जान। Raw mango: the heart of every Banarasi pickle.
On the terraces of Banaras, summer arrives with two things together — heat that shimmers off the Ganga ghats, and the arrival of kachi kairi. Our mother knew the moment was right not by any calendar, but by the smell of raw mango drifting from the neighbour's tree.
At Salteen, we use raw mangoes sourced directly from UP orchards — handpicked when they are still firm, fiercely tangy, and completely without sweetness. This is the precise moment that makes great achar. Too early and the mango is hard without flavour. Too late and it softens and loses its sharp punch.
The kachi kairi is cut, sun-dried on white cotton sheets on our terrace, and combined with our own cold-pressed mustard oil and fresh-ground spices. This is not manufacturing. This is preservation the way generations before us intended it.
In our house, when the kairi arrived, everything stopped. The kitchen became a production unit, and the whole neighbourhood knew it was achar season.

Our raw mangoes come from mango orchards in the Varanasi and Mirzapur belt of Uttar Pradesh — a region whose soil and summer heat produce kairi with the exact tartness required for authentic Banarasi achar. We source directly from orchard owners, not from wholesale mandis, ensuring we get first pick at the right stage of ripeness.
