Nutmeg is a spice that most people encounter only in its pre-ground form — pale, slightly musty, a ghost of what it should be. Freshly grated nutmeg is an entirely different ingredient: intensely aromatic, warm, with a complex spice profile that has woody, sweet, and slightly medicinal notes all at once.
At Salteen, we use whole nutmeg and grate it fresh for each production batch of our premium laddus. The difference from pre-ground nutmeg powder is extraordinary — the volatile essential oils that give nutmeg its character evaporate rapidly once grated, which is why grinding fresh is so important.
Jaiphal is used sparingly — a small amount provides the warm, complex depth note that distinguishes a thoughtfully spiced laddu from a simple sweet ball. Too much and its slightly medicinal quality becomes dominant.

Nutmeg trees have been cultivated in Kerala for centuries. The spice is the dried seed kernel of the nutmeg fruit — the lacy red covering of the same seed is mace (javitri). We source whole nutmeg from Kerala suppliers and grate it fresh in small quantities for each production batch — never using pre-ground powder.
