सरसों — Salteen का सबसे बड़ा राज़। The seed that started everything — grown on our land, pressed in our unit.


The soul of any North Indian pickle is mustard — both as whole seeds in the spice mix and as the pungent oil that carries and preserves everything. At Salteen, we took an unusual decision for a food brand: we grow our own.

On our family farmland on the outskirts of Varanasi, we plant sarson every November. By February, the fields are a sea of yellow — one of the most beautiful sights in the UP winter. We wait for the seed pods to mature, then harvest when the oil content in the seeds is at its absolute peak.

Those seeds serve two purposes at Salteen. A portion goes into our pickle masala — whole, cracked, or coarsely ground — where they provide the characteristic pungent, nutty depth of authentic Banarasi achar. The remainder goes into our cold-press unit, where they become the oil that forms the base of every pickle we make. From one seed: two essential ingredients.

Our mustard is grown on Salteen family farmland near Varanasi. Planted in November, harvested in February. We control the soil treatment, irrigation, and harvesting timing ourselves — which means we know exactly what went into the ground and when the seeds were at their best. No pesticide overdose. No early harvest for market convenience. Just pure sarson, grown right.
