In every North Indian kitchen that has ever mattered, there has been one smell that means home. Not cardamom. Not ghee. Mustard oil — sharp, alive, almost aggressive — heating in an iron kadhai before dawn. That smell is Banaras waking up.
At Salteen, we did not go to a wholesale market to buy oil. We grew it. On our own farmland on the outskirts of Varanasi, we planted sarson every winter, watched the fields turn bright yellow in the January sun, and harvested the seeds when the oil content was at its highest peak. Not a single drop of Salteen oil has been bought from a trader.
From those seeds, we press oil in our own Kacchi Ghani (cold-press) unit — the same slow, low-heat method that our grandmothers trusted. No chemicals. No refining. No shortcuts. Just pure, pungent mustard oil, exactly as nature intended — and exactly as every great Banarasi achar requires it.
Commercial refined oil is extracted using heat and chemicals to get every last drop. Our Kacchi Ghani presses slowly, at low temperatures. The yield is lower, but the quality is gold.

🌾 Salteen's Own Farm & Cold-Press Unit — Varanasi, UP
The mustard seeds in every jar of Salteen pickle were grown on our own family farmland near Varanasi. Planted in the cool of November, harvested in February when the yellow flowers have turned to seed pods fat with oil. We do not buy from wholesalers. We do not outsource. After harvest, the seeds go directly into our own Kacchi Ghani cold-press unit — slow-pressed at low temperature for maximum purity and aroma. From soil to press to pickle jar — every step stays within the Salteen family.
