At Salteen, we use laung in our warming spice mixes for certain pickle preparations and in our laddus and thekua where a hint of clove complexity complements cardamom and cinnamon beautifully. We also use whole cloves in certain pickle preparations where the slow infusion of clove oil into mustard oil over weeks creates a beautifully complex base.

Laung is also one of the most potent natural analgesics known — which is why a clove pressed against a toothache is a remedy as old as Indian civilization itself.
