If you have eaten a traditional Banarasi mango pickle and wondered what gives it that distinctive, faintly peppery, slightly onion-like depth — the answer is kalonji. Nigella seeds are small, angular, intensely black, and carry a complex flavour that no other spice can replace in North Indian pickling.

At Salteen, kalonji goes into virtually every pickle masala we make. It is used whole — lightly bruised to release its essential oils — and combined with mustard seeds, methi, and jeera to form the base of our traditional pickle spice blend. The seeds also appear on certain namkeen preparations, where they add their distinctive aroma and gentle heat.

Kalonji is also one of the most revered spices in Islamic and Ayurvedic medicine. Our grandmother called it 'the seed of blessings' — and added it generously to everything.

Kalonji cannot be replaced. Its flavour is its own — part pepper, part onion, part something no dictionary has a word for. Without it, the pickle is not complete.
