Cinnamon is a spice that works quietly — it does not announce itself loudly like cardamom or clove, but its absence is immediately felt as a flatness in the preparation. In our laddus and sweet preparations, dalchini provides the warm, slightly sweet background note that rounds out the sharper flavours and the richness of ghee.
At Salteen, we use Ceylon cinnamon rather than the more common Cassia — the genuine cinnamon bark from Sri Lanka and South India that has a more delicate, complex flavour and significantly lower coumarin content. True dalchini crumbles when you break it; Cassia bark is hard and thick. The difference in flavour is meaningful — particularly in sweet preparations where subtlety is valued.
Dalchini also has a long tradition in Ayurvedic medicine as a warming, blood-sugar-regulating spice — making our laddu preparations carry both culinary and therapeutic value.

We source genuine Ceylon cinnamon — identifiable by its multi-layered, papery thin quills — rather than the harder, thicker Cassia bark sold as cinnamon in most Indian markets. We grind it fresh for each production batch.
