Every serious namkeen maker has their own chaat masala recipe — the specific proportions of amchur, kala namak, jeera, chilli, and other spices that defines the house flavour profile. At Salteen, our chaat masala has been developed over years of refinement, starting from our mother's recipe and adjusted for the products it would season.
Our blend is amchur-forward — the dominant note is the concentrated mango tartness that provides the primary sour-tangy character. Kala namak provides the distinctive sulphurous background that immediately says 'street food'. Roasted jeera adds warm earthiness. Red chilli provides building heat. The balance between these elements is our recipe.
This masala goes into our banana chips, over our roasted snacks, and into our chaat-style mixed namkeen preparations. It is the seasoning that makes people ask — what is that flavour? — and then immediately want more.

🌶️ Salteen House Blend — Varanasi
Our chaat masala is blended in-house at our Varanasi production facility using individually sourced ingredients — amchur from UP dried mango, kala namak from Himalayan sources, jeera roasted fresh in small batches, and red chilli ground from whole UP chillies. Each batch is blended to the same specification and tested for flavour before going into production.
