When fresh kairi is not in season, amchur brings the sour punch of raw mango to any preparation. Made by sun-drying raw mango slices and grinding them to a fine, pale tan powder, amchur is a concentrated souring agent with a fruity complexity that vinegar and citric acid cannot replicate.
At Salteen, amchur appears in the masala that stuffs our karela and hari mirch pickles, in our chaat masala blend, and as a key component of many namkeen seasoning mixes. Its role is to provide tartness — the same function that kairi plays in raw mango pickle — but in a shelf-stable powder form that can be used year-round.
Amchur also has a secondary function: its malic and tartaric acids act as natural tenderisers and preservatives in the preparations they feature in.
