Thekua is perhaps the most Banarasi food item that exists — a hard, sweet, wheat-based disc traditionally made for Chhath Puja and eaten throughout the winter. Every family has its version. Ours has been made with stone-ground whole wheat atta, jaggery, ghee, and ajwain for three generations.

At Salteen, we use whole wheat atta sourced from UP wheat farms and ground at stone-grinding units that retain the bran, germ, and fibre that commercial milling strips away. This gives our thekua and namakpare their characteristic rustic texture — slightly coarser, more flavourful, and more nourishing than preparations made with refined maida.

For us, using whole wheat atta is both a flavour decision and a values decision. Thekua should taste wholesome — because it is.
