Tejpatta is the background singer of the spice world. It never takes the lead, never announces itself loudly — but remove it from a preparation and something intangible disappears. The warm, slightly camphor-like, clove-adjacent aroma of Indian bay leaves is what gives many spice preparations their characteristic depth and complexity.

Note that Indian tejpatta (Cinnamomum tamala) is completely different from the Mediterranean bay leaf used in Western cooking. Our native bay leaf has a richer, more complex aroma with distinctive cinnamon-clove undertones that Mediterranean bay lacks entirely.

At Salteen, tejpatta goes into certain pickle spice infusions — added whole to hot mustard oil at the beginning of the tadka, where it perfumes the oil before the other spices are added. The leaves are used whole and removed — their purpose is entirely aromatic.

A tejpatta in hot oil gives you about 30 seconds of the most beautiful spice aroma imaginable. That moment perfumes the entire preparation.
