At Salteen, our preference for jaggery over refined sugar is well-established — gur's mineral richness, caramel complexity, and unrefined character make it superior for most sweet preparations. However, we are honest enough to acknowledge that refined sugar has a place in certain preparations where its clean, uncompeting sweetness is actually what the recipe requires.
In our murabba preparations — where fruit is preserved in a clear, shining syrup — the visual clarity and clean sweetness of refined sugar creates a result that jaggery, with its colour and molasses character, cannot match. Similarly, in certain traditional sweet preparations where a pure white colour is important, refined sugar is the appropriate choice.
We use UP-produced cane sugar — the refined product of sugarcane grown in the same fields that produce the jaggery we prefer.
We use jaggery where jaggery is better — which is most places. We use sugar where sugar is better. Honesty about ingredients is part of our identity.

Where It Comes From
🌾 UP Sugarcane — Refined Sugar
We source refined sugar from UP-based sugar mills that process the same Gangetic plain sugarcane that produces our preferred jaggery. The refining process removes the minerals and molasses that make jaggery nutritionally superior — but produces the specific functional properties our murabba and select sweet preparations require.
