सूजी — सबसे सादा, सबसे प्यारा। Coarse semolina roasted in desi ghee — the humble, beloved base of Salteen's sooji laddu.
Sooji ka laddu is the sweet preparation that feels most like home. Not the elaborate mithai of sweet shops — but the simple, warm, slightly grainy laddu that a mother makes when someone is unwell, when there is a small celebration, or simply because the family asked for something sweet.
At Salteen, our sooji laddu begins with coarse-grain semolina slowly roasted in generous desi ghee in a thick iron kadhai. This process — which takes 20-25 minutes of continuous stirring — transforms the raw, starchy semolina into something golden, fragrant, and deeply nutty. The moment the sooji turns the right shade of gold and the ghee appears at the edges, the heat is reduced and the mixture is built with jaggery, cardamom, cashews, and raisins.
The resulting laddu is crumbly, warm, and intensely satisfying — the definition of comfort food.
Sooji laddu cannot be rushed. The roasting has to happen slowly, with patience, until the semolina is perfectly golden. There is no substitute for this step.
