In the heat of Banaras summer — when the air shimmers over the ghats and even the Ganga seems sluggish — a bowl of cold pudina chutney with anything fried is the most refreshing thing imaginable. The cool, menthol freshness of mint cuts through the oil and spice like nothing else.
At Salteen, we harvest and sun-dry fresh pudina from the summer garden for use in chutneys and certain snack preparations. Dried mint retains its cooling menthol compounds and aromatic character well — and provides the concentrated flavour intensity that fresh mint in a large-batch chutney cannot always deliver consistently.
Pudina also features in certain namkeen preparations where its cool freshness provides an unexpected but welcome contrast to the warm spice of the standard namkeen blend.

We harvest fresh pudina from gardens in the Varanasi region during the summer months when mint is at its most vigorous and aromatic. The fresh leaves are spread on clean cotton cloth and sun-dried until they crumble easily — preserving their colour and menthol content for year-round use in chutneys and namkeen.
