At Salteen, our moong dal namkeen is made with thin-skin yellow moong sourced from UP farmers. The dal is soaked just long enough to soften slightly without becoming starchy, then drained, dried, and fried in groundnut oil at a carefully controlled temperature. Too hot and the dal darkens before it crisps. Too cool and it absorbs oil and goes soft.
