When we process hundreds of kilograms of raw mango for our achar, the seeds are a significant by-product. In a conventional factory, these would be discarded. In a traditional Banarasi household — and at Salteen — they are recognised for what they are: a valuable ingredient with deep Ayurvedic significance.

The mango kernel — the seed inside the mango pit — is dried, ground to a powder, and used in traditional preparations for its astringent, digestive, and antimicrobial properties. Aam guthli powder has been used in Indian home medicine for centuries.

At Salteen, our mango kernel is dried and retained from our achar production as part of our commitment to zero waste — a reminder that in Indian food culture, every part of every ingredient has always had its purpose.
