At Salteen, we are honest about maida. It is a refined ingredient that we use selectively and purposefully — not as a default, and not in preparations where whole wheat atta or besan would do the job as well or better.

Maida is used in our namakpare preparations where a specific crumbly, melt-in-the-mouth texture is required — a texture that whole wheat atta, with its bran content, cannot deliver. For certain thin, crispy preparations, the gluten structure of refined flour creates a different, equally valid textural experience.

We are transparent about its use. Maida is not unhealthy in the quantities used in traditional snack preparations where a handful of namakpare is a condiment, not a meal. The issue with maida is overconsumption — not its existence.

We do not avoid maida ideologically — we use it where it serves the preparation best and nothing else will do. That honesty is part of who we are.
