Kokum is not a North Indian ingredient — it is a West Coast specialty, grown and used primarily in Goa, Maharashtra's Konkan coast, and Kerala. Its deep purple skin produces an intensely sour, slightly fruity acidity that is different from lemon, tamarind, or amchur.
At Salteen, we incorporate kokum into certain specialty and artisan pickle preparations — a deliberate cross-regional inspiration that brings the flavour intelligence of the Indian coastline into our Banarasi tradition. The result is a pickle with an unexpected dimension of sourness — more aromatic and fruity than tamarind, with a beautiful natural purple colour.
Kokum is also the basis of kokum sharbat — the traditional Goan summer drink that is one of the most naturally cooling beverages in Indian food tradition.
