Karela is an ingredient that divides people — until they taste it as a properly made Banarasi stuffed pickle. Then it converts them.
Our mother's karela achar was legendary in our neighbourhood. Small, firm karelas from the monsoon harvest were slit open, their seeds removed, and then stuffed with a ground mixture of ajwain, kalonji, amchur, hing, and red chilli. Each stuffed karela was then packed into a jar, submerged in our cold-pressed mustard oil, and left to mature in the sun.
The bitterness does not disappear — it mellows, deepens, and becomes the defining character of the pickle. Karela achar pairs best with plain dal-chawal, where its bitterness cuts through the starchy mildness and brings the meal alive.
People who say they don't like karela have never tried it properly made — stuffed with masala and matured for weeks in mustard oil.
