Kala nimbu is made at our Varanasi facility during peak summer. Fresh UP nimbu are packed in layers of coarse rock salt in earthenware jars and placed on our terrace under the full summer sun. Over 4-6 weeks, the lemons transform from bright yellow to completely black as moisture evaporates and natural Maillard reactions proceed.
