In our house, refined sugar was the last resort. Our mother sweetened everything with gur — a rich, caramel-coloured block of jaggery made from sugarcane juice that carried the minerals, the trace elements, and the complex flavour that refined sugar strips away completely.
At Salteen, gur is the primary sweetener in our laddus and thekua. We source traditional UP jaggery — not the pale yellow commercial variety but the deep amber, slightly smoky jaggery made in small batches in local sugarcane-pressing units. This jaggery has a molasses-like depth that gives our sweets a complexity that sugar simply cannot produce.
Gur is also the sweetener that our bodies recognise and process more gently than refined sugar — making it the traditional choice for festival sweets, temple offerings, and everyday indulgence that still carries nutritional value.
