Without imli, there is no chaat. This is not an exaggeration — it is the foundational souring agent of the entire North Indian street food tradition. The imli ki chutney that goes over aloo tikki at the Banaras ghats, the tamarind pulp in pani puri, the sweet-sour reduction drizzled over bhel — it all starts with tamarind.
At Salteen, we use whole tamarind pods and blocks of seedless tamarind pulp for our chutney preparations. The tamarind is soaked, strained, and combined with jaggery and spices to create our house imli chutney — a preparation that balances sour, sweet, and spicy in proportions our mother refined over decades.
Imli is one of the most complex natural flavour compounds in the Indian pantry — containing tartaric acid, malic acid, succinic acid, and dozens of volatile flavour compounds.
Imli chutney has to have the right balance — too sour and it overwhelms, too sweet and it becomes mithai. Getting that balance right is the mark of a real cook.
