Banaras loves heat. Walk into any traditional Banarasi kitchen and you will find a jar of hari mirch achar sitting on the shelf — plump green chillies stuffed with spices and submerged in mustard oil. It is a condiment that adds fire to everything from dal to parathas.

At Salteen, we source our green chillies from local UP farms throughout the year. The best batches come from the monsoon season when the chillies are plumpest, freshest, and at their most fiery. We use whole chillies — slit, seeded partially, stuffed with a blend of mustard seeds, ajwain, hing, and amchur, then packed in our cold-pressed mustard oil.

The result is a pickle that is simultaneously fresh, fiery, and deeply savoury — the kind that makes you reach for it again and again even when your eyes are watering.
