Ghee (Clarified Butter)
घी
घी डालो, घर खुशबू से भर जाता है। Pure desi ghee — the aroma that means home in every North Indian kitchen.
The Salteen Story
घी — जो बिना हो, वो मिठाई नहीं। Pure clarified butter — the binding, the flavour, and the soul of every Salteen sweet.
In Banaras, no sweet preparation begins without ghee. The moment the ghee goes into a hot kadhai and the aroma rises — nutty, rich, unmistakably Indian — you know something extraordinary is being made.
At Salteen, we use pure desi ghee sourced from local dairies in the Varanasi region. Our laddus and thekua are both made with generous amounts of ghee — it is simultaneously the fat that cooks the besan or roasts the flour, the binder that holds the laddu together, and the flavour compound that makes the finished product taste like nothing else.
Desi ghee is a traditional fat that modern food science is increasingly vindicating. Its fat profile, its butyrate content, and its high smoke point make it a genuinely superior cooking fat — particularly for traditional preparations that require slow roasting at moderate heat.
You can taste the difference between ghee and oil in a laddu immediately. Ghee is warmth. Oil is just fat.

The Flavour of Ghee (Clarified Butter)
Why It Matters
Health Benefits
Desi ghee — made from cultured butter — is rich in fat-soluble vitamins and short-chain fatty acids that support gut health, immunity, and brain function.
Brain & Nerve Health
Rich in DHA, Vitamin D, and K2 — essential for brain function, nerve health, and calcium metabolism.
Gut Health
Butyrate in ghee is a key fuel source for colon cells and supports a healthy gut microbiome.
High Smoke Point
Ghee can be heated to very high temperatures without oxidising — making it one of the safest traditional cooking fats.
Fat-Soluble Vitamin Carrier
Vitamins A, D, E, and K are fat-soluble — ghee helps your body absorb these from all the other foods in a meal.

Where It Comes From
🥛 Local Varanasi Dairy — Desi Ghee
We source our desi ghee from local dairy cooperatives in the Varanasi region who produce small-batch ghee using the traditional slow-simmering method. Our ghee is golden-coloured, granular at room temperature, and deeply aromatic — the hallmarks of genuine desi ghee rather than commercial processed butter.
