Alsi is one of those traditional Indian ingredients that quietly disappeared from the urban kitchen over the 20th century — replaced by refined oils, commercial supplements, and processed foods that lacked its extraordinary nutritional depth. But in rural UP kitchens, alsi never really left.

Our grandmother made alsi laddus during winter — roasted flaxseed bound with jaggery and ghee into a preparation that was considered deeply warming and health-giving.
