North Indian winter carrots are a different vegetable from the pale, bland carrots available year-round. The deep red Desi gajar of UP — harvested October through February — is sweeter, more aromatic, and more nutritious than any imported variety.
At Salteen, we use thick, firm Desi gajar cut into long batons for our mixed veg achar. The carrot's natural sweetness provides a beautiful counterpoint to the sour and spicy elements of the pickle masala, and its firm texture holds perfectly through weeks of oil maturation.
Carrot also gives our mixed pickle its characteristic beautiful colour — deep orange-red against the white of gobhi and the pale of other vegetables.
