At Salteen, our aloo bhujia begins with UP potatoes — boiled, mashed, and combined with besan, salt, and our proprietary blend of spices into a smooth dough. This dough is then hand-pressed through a traditional sev mould directly into hot groundnut oil, where it fries to a perfect golden crisp in seconds.
The result is a tangled, impossibly light nest of potato sev with a crunch that is deeply satisfying and a spice balance that is distinctly Banarasi — warm, slightly sharp, with a hint of hing and jeera in the background.

We source our potatoes from farms in the Varanasi and Allahabad belt — UP is one of India's largest potato-producing states, with alluvial soil that produces dense, starchy varieties ideal for bhujia. We select medium-starch varieties that mash smoothly without becoming gluey.
