आम पापड़ — धूप में सुखाया, प्यार से बनाया। Mango pulp dried to thin, tangy sheets on Varanasi terraces — the iconic Banarasi summer treat.
Every Banarasi summer childhood has aam papad in it. The thin, pliable sheets of dried raw mango pulp — somewhere between a fruit leather and a sour candy — were made at home during peak mango season and distributed liberally to children who would eat them in strips, savouring the intense sweet-sour-spicy combination.
At Salteen, aam papad is a seasonal product made during the kairi season. Raw mango pulp is prepared with sugar, chilli, black salt, and spices, then spread in thin layers on cloth-covered frames and dried in the summer sun over several days until just the right pliability is achieved.
The result is sheets of intensely flavoured mango leather that are simultaneously a nostalgic snack, a digestive condiment, and a preservable taste of summer.
Aam papad was the original school lunch snack in Banaras. A few strips in a cloth pouch, and you were set for the afternoon.

☀️ UP Mango Season — Varanasi Terrace Drying
Aam papad is made at our Varanasi facility during peak mango season. Raw kairi is cooked and pureed with spices and jaggery, then spread in thin layers on clean cotton-covered drying frames and sun-dried on our Banaras terrace over 3-5 days.
